Eric Perez started in Toulouse (France) at the age of 15 in one of the most renowned pastry shop in the south of France. In that place, he did his apprenticeship and learned the art of pastry. This shop was instrumental and gave him the strong foundation he needed for his future.
In 85, he moved to the United States of America where he worked as pastry chef for the French embassy in Washington D.C. serving many high dignitaries from all over the world.
